Ingredients:
2 large eggs
2 tablespoons milk
1 tablespoon shredded cheddar cheese
1 tablespoon finely diced bell pepper
1 tablespoon chopped cooked ham or bacon (optional)
1 tablespoon chopped green onion or chives
1 teaspoon butter or cooking spray
Pinch salt
Pinch black pepper
Pinch dried herbs (optional)
Instructions:
Whisk eggs, milk, salt, pepper, and herbs in a greased microwave-safe mug.
Stir in cheese, bell pepper, ham or bacon, and green onion until evenly distributed.
Microwave on high for about 45 seconds, then remove and gently stir from edges to center.
Microwave again for 30–45 seconds, until puffed and just set with no runny egg.
Let rest 30–60 seconds to finish cooking and settle.
Top with extra cheese or herbs if desired and serve warm straight from the mug.
