Total Time: 10 minutes
Servings: 2 large or 3–4 small drinks
Ingredients:
Baja Blast soda – 2 cups (480 ml), very cold
Lemon-lime soda (optional) – ½ cup (120 ml), very cold
Ice cubes – 3 to 4 cups (about 420–560 g), as needed
Simple syrup or white sugar – 1–2 tablespoons, to taste
Fresh lime juice – 1 tablespoon
Lime wedges – for garnish
Coarse sugar – 2 tablespoons, for rimming (optional)
Vanilla ice cream – 1–2 scoops (optional, for creamy version)
Instructions:
Chill sodas thoroughly and, if desired, rim glasses with lime and coarse sugar; place glasses in freezer.
Add 3 cups of ice to a blender. Pour in cold Baja Blast, optional lemon-lime soda, and lime juice; add sugar if using.
Blend on high until thick and slushy, adding more ice for thickness or a splash of soda if too thick to blend.
Taste and adjust sweetness or lime. For a creamy version, add vanilla ice cream and blend briefly until smooth.
Pour immediately into chilled glasses, letting the slush mound slightly above the rim. Garnish with lime wedges and straws.
Serve right away; if it melts, re-blend with a bit more ice to refresh the texture.

Notes

Pro Tip:
Freeze extra Baja Blast in ice cube trays and use those instead of regular ice for an even stronger flavor and less dilution.
