Beet–Apple–Carrot “Ruby” Juice

Servings: 2 large glasses (or 3–4 small)
Ingredients:
2 medium beets, scrubbed and trimmed
3 medium carrots, scrubbed and trimmed
2 medium sweet apples, cored
1–2 cm piece fresh ginger, peeled (optional)
1–2 tablespoons fresh lemon juice
½–1 cup cold water (for blender method only)
Ice cubes, for serving (optional)
Instructions:
Prep beets, carrots, apples, and ginger; cut into chunks.
Juicer: Juice beets, carrots, apples, and ginger, then stir in lemon juice.
Blender: Blend produce with ½ cup water until very smooth.
Strain blended mixture through a sieve or nut milk bag into a jug.
Stir in lemon juice (if not added), adjust with more lemon or water, and chill with ice if desired.
Pour into glasses and serve immediately, or refrigerate up to 24 hours and shake before serving.
