Blended Cottage Cheese Alfredo Sauce

Ingredients:
1 ½ cups cottage cheese
½ cup freshly grated parmesan cheese
¾ cup milk (plus more as needed)
2 tablespoons unsalted butter
2 cloves garlic, minced
¼ teaspoon fine sea salt
¼ teaspoon black pepper
Pinch nutmeg (optional)
2–4 tablespoons hot pasta cooking water, as needed
12 oz pasta of choice, cooked
Chopped fresh parsley, for garnish (optional)
Extra grated parmesan, for serving
Instructions:
Cook pasta in salted water until al dente; reserve 1 cup pasta water, then drain.
Blend cottage cheese, milk, parmesan, salt, pepper, and nutmeg until completely smooth and creamy.
Melt butter in a skillet over medium-low heat and gently sauté garlic until fragrant.
Pour blended mixture into skillet and warm over low heat, stirring, without boiling; thin with milk or pasta water as needed.
Toss drained pasta with the warm sauce, adding splashes of pasta water until glossy and well-coated.
Serve immediately, garnished with extra parmesan and parsley.
