Blistered Cabbage Steaks

Ingredients:
1 medium head green or Savoy cabbage (900 g–1 kg)
4 tablespoons olive oil
3 cloves garlic, minced
Zest of 1 lemon
Juice of 1 lemon (for finishing)
1 teaspoon smoked paprika
½ teaspoon ground cumin (optional)
¼–½ teaspoon red pepper flakes
1 to 1½ teaspoons salt
½ teaspoon freshly ground black pepper
2 tablespoons chopped fresh parsley
Flaky sea salt, for serving
2–3 tablespoons grated Parmesan or vegan Parmesan, optional
Instructions:
Preheat oven to 220°C / 425°F and line a large sheet pan with parchment. Trim outer leaves, then slice cabbage into 1.5–2 cm thick steaks. Arrange on pan.
In a bowl, whisk olive oil, garlic, lemon zest, smoked paprika, cumin, red pepper flakes, salt, and pepper.
Brush cabbage steaks on both sides with the seasoned oil, coating evenly and spacing them out on the pan.
Roast 20–25 minutes, flipping halfway, until edges are charred in spots and centers are tender. Move to top rack at the end for extra blistering if desired.
Remove from oven and drizzle with lemon juice. Sprinkle with parsley and flaky sea salt. Add grated Parmesan if using.
Transfer to a serving platter and serve hot with extra lemon wedges and optional sauces.
