Ingredients:
Rustic bread or sourdough slices – 4
Fresh mozzarella – 225 g (8 oz), sliced
Ripe tomatoes – 2 medium, sliced
Fresh basil leaves – 1 small handful
Extra-virgin olive oil – 2 tablespoons
Balsamic glaze – 2–3 tablespoons
Garlic – 1 clove, peeled
Sea salt – ½ teaspoon
Freshly ground black pepper – ¼ teaspoon
Optional: crushed red pepper flakes, flaky sea salt
Instructions:
Slice the mozzarella, tomatoes, and prepare basil and garlic.
Toast the oiled bread slices under the broiler or on a grill pan until golden.
Rub hot toast with the garlic clove, then season lightly with salt and pepper.
Layer mozzarella and tomato slices on each piece; season again.
Broil briefly until cheese softens and edges begin to melt, then top with basil leaves.
Drizzle with balsamic glaze and a little olive oil, finish with optional flakes or flaky salt, and serve immediately.
