Cheese-Stuffed Sweet Potatoes

Ingredients:
4 medium sweet potatoes
2 tablespoons olive oil
30 g unsalted butter, softened
120 g shredded cheddar cheese
60 g shredded mozzarella cheese
60 ml milk or cream
2 cloves garlic, minced
½ teaspoon salt
¼ teaspoon black pepper
½ teaspoon smoked paprika (optional)
2 tablespoons chopped fresh chives
2 tablespoons grated Parmesan (optional)
Chili flakes, to taste (optional)
Instructions:
Preheat oven to 200°C (400°F). Scrub, dry, and prick sweet potatoes, rub with olive oil, and bake 45–60 minutes until very tender.
Cool slightly, slice in half lengthways, and scoop most of the flesh into a bowl, leaving a thin layer inside the skins.
Mash sweet potato with butter, cheddar, mozzarella, milk or cream, garlic, salt, pepper, and smoked paprika until creamy; stir in half the chives.
Arrange skins on a tray and spoon filling back into each, mounding slightly; top with Parmesan and chili flakes if using.
Bake 10–15 minutes at 200°C (400°F) until cheese is melted, lightly golden, and skins are a little crisp.
Rest 5 minutes, garnish with remaining chives and extra pepper, then serve warm, with sour cream if desired.
