Chicken Satay with Peanut Sauce

Ingredients:
For the Chicken Satay:
800 g boneless, skinless chicken thighs, cut into thin strips
½ cup (120 ml) coconut milk
2 tablespoons soy sauce
1 tablespoon brown sugar
1 tablespoon fresh lime juice
1 tablespoon neutral oil
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 teaspoon ground coriander
1 teaspoon ground cumin
½ teaspoon ground turmeric
½ teaspoon salt
12–16 wooden skewers, soaked
For the Peanut Sauce:
½ cup (120 g) smooth peanut butter
½ cup (120 ml) coconut milk
2 tablespoons soy sauce
1–2 tablespoons brown sugar
1–2 tablespoons fresh lime juice
1–2 teaspoons red curry paste or sriracha
1 teaspoon fresh ginger, grated
2–4 tablespoons warm water, as needed
For Serving:
Chopped cilantro
Chopped roasted peanuts
Lime wedges
Cucumber slices and red onion (optional)
Instructions:
Whisk marinade ingredients in a bowl, add chicken strips, coat well, cover, and marinate in the refrigerator for at least 30 minutes or up to overnight.
Soak wooden skewers in water for 20–30 minutes, then thread marinated chicken onto skewers in a slightly bunched pattern.
Combine peanut butter, coconut milk, soy sauce, brown sugar, lime juice, chili paste, and ginger in a saucepan or bowl; warm gently if needed and thin with warm water until smooth and pourable.
Preheat a grill, grill pan, or skillet over medium-high heat and lightly oil the surface.
Cook chicken skewers for about 3–4 minutes per side until fully cooked and lightly charred, turning once.
Serve skewers on a platter with bowls of peanut sauce, garnished with cilantro, chopped peanuts, lime wedges, and cucumber or onion if using.
