Ingredients:
Cooked shredded chicken – 3 cups
Unsalted butter – 3 tablespoons (plus extra for greasing)
All-purpose flour – 3 tablespoons (for sauce)
Chicken broth – 2 cups
Milk or half-and-half – 1 cup
Onion, finely diced – 1 small
Carrots, thinly sliced – 2
Celery stalks, sliced – 2
Frozen peas – 1 cup
Garlic, minced – 3 cloves
Dried thyme – 1 teaspoon
Dried parsley – 1 teaspoon
Salt and black pepper – to taste
Dumpling Topping:
All-purpose flour – 2 cups
Baking powder – 1 tablespoon
Salt – ½ teaspoon
Unsalted butter, cold and cubed – 4 tablespoons
Grated cheddar cheese (optional) – ½ cup
Fresh parsley, chopped – 2 tablespoons
Milk or buttermilk – ¾ to 1 cup
Instructions:
Preheat oven to 375°F (190°C) and grease a 9x13-inch baking dish.
Sauté onion, carrots, and celery in butter until soft; add garlic, then flour and cook briefly.
Whisk in broth and milk; simmer until thick. Stir in chicken, peas, herbs, salt, and pepper. Pour into baking dish.
Mix flour, baking powder, and salt; cut in cold butter. Stir in cheese and parsley, then add milk to form a thick batter.
Drop spoonfuls of dumpling batter over hot filling, spacing them slightly apart.
Bake 25–30 minutes until dumplings are puffed and lightly golden and filling is bubbling. Rest briefly, garnish with parsley, and serve warm.
