Ingredients:
1 medium green cabbage, thinly sliced
2 tablespoons olive oil
1 tablespoon lime juice (plus extra for serving)
1 teaspoon ground cumin
1 teaspoon smoked paprika
1 teaspoon chili powder
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon salt
¼ teaspoon black pepper
1 can (400 g) black beans, drained and rinsed
8 small flour or corn tortillas
1 ripe avocado, sliced or diced
½ cup tomato salsa
¼ cup plain Greek yogurt or sour cream
½ cup shredded cheese [optional]
¼ cup chopped fresh cilantro
1 small red onion, sliced or diced [optional]
Instructions:
Season sliced cabbage with olive oil, lime juice, and all spices.Cook cabbage in a hot skillet until tender-crisp and lightly charred, 8–10 minutes.Warm tortillas in a skillet or low oven until soft and pliable.Prepare toppings: beans, avocado, salsa, yogurt or sour cream, cheese, cilantro, and red onion.Fill each tortilla with crispy cabbage, then add beans, avocado, salsa, yogurt or sour cream, cheese, and cilantro.Serve immediately with extra lime wedges and toppings on the side.
