Ingredients:
Boneless skinless chicken breasts – 700 g, bite-sized
Salt – 1 teaspoon
Black pepper – ½ teaspoon
Paprika – 1 teaspoon
Dried Italian seasoning – 1 teaspoon
Olive oil – 1 tablespoon
Unsalted butter – 4 tablespoons, divided
Garlic – 5 cloves, minced
Broccoli florets – 2 cups
Carrot – 1 large, sliced
Red bell pepper – 1 medium, sliced
Green beans – 1 cup
Chicken broth – ½ cup
Lemon juice – 2 tablespoons
Fresh parsley – 2 tablespoons, chopped
Grated Parmesan (optional) – 2 tablespoons
Instructions:
Season chicken with salt, pepper, paprika, and Italian seasoning.
Sear chicken in oil and 2 tablespoons butter until browned and cooked through; remove.
Sauté broccoli, carrots, bell pepper, and green beans in 1 tablespoon butter until tender-crisp.
Make space in the pan; gently cook garlic in remaining butter until fragrant.
Deglaze with broth and lemon juice, scrape up browned bits, return chicken, and simmer briefly.
Stir in parsley, adjust seasoning, sprinkle Parmesan if using, and serve hot.
