Ingredients:
1 tablespoon olive oil
1 tablespoon butter
1 medium onion, finely chopped
3 cloves garlic, minced
450 g (1 lb) ground beef (or half beef, half pork)
1 medium green cabbage, chopped
1 large carrot, diced
1 celery stalk, diced
1 cup (200 g) uncooked white rice
1 can (800 g / 28 oz) crushed tomatoes
6 cups (1.5 L) beef or chicken broth
1 cup (240 ml) water (more as needed)
2 tablespoons tomato paste
1 teaspoon smoked or sweet paprika
1 teaspoon dried marjoram (or oregano)
1 teaspoon dried thyme
1–2 bay leaves
1½ teaspoons salt (or to taste)
½ teaspoon black pepper (or to taste)
1–2 teaspoons sugar or honey (optional)
2 tablespoons fresh parsley, chopped
Sour cream, for serving (optional)
Instructions:
Sauté onion in oil and butter, add garlic, then brown the ground meat; drain excess fat if needed.
Add carrot, celery, and chopped cabbage; season with paprika, herbs, salt, pepper, and bay leaves; cook until cabbage starts to soften.
Stir in tomato paste and cook briefly, then add crushed tomatoes, broth, and water, scraping the bottom of the pot.
Add the rice, bring to a boil, then simmer gently 25–30 minutes, stirring occasionally, until cabbage and rice are tender.
Adjust seasoning; add sugar or honey if needed, remove bay leaves, and stir in chopped parsley.
Serve hot with a dollop of sour cream and bread, if desired.
