One-Pot “Marry Me” Tortellini

Ingredients:
1 tablespoon olive oil
2 tablespoons unsalted butter
3 cloves garlic, minced
½ teaspoon crushed red pepper flakes
½ cup oil-packed sun-dried tomatoes, drained and sliced
1 ½ cups chicken broth
1 cup heavy cream
½ teaspoon dried oregano
½ teaspoon dried thyme
1 teaspoon Italian seasoning
500 g (about 1 lb) cheese tortellini (refrigerated)
½ cup freshly grated parmesan cheese, plus extra for serving
2 cups fresh baby spinach
Salt and black pepper, to taste
1–2 tablespoons chopped fresh basil (optional)
Instructions:
Sauté garlic and red pepper flakes in olive oil and butter over medium heat until fragrant.
Add sun-dried tomatoes, then stir in broth, cream, and dried herbs; bring to a gentle simmer.
Add tortellini, stir, cover, and cook 5–7 minutes until tender, stirring once or twice.
Stir in parmesan until melted and sauce thickens slightly.
Add spinach and cook until just wilted; adjust sauce thickness with a splash of broth or cream if needed.
Season with salt and pepper, garnish with extra parmesan and basil, and serve hot.
