Organic Creamy Cottage Cheese Alfredo Pasta

Ingredients:
12 oz (340 g) organic fettuccine or linguine
1 ½ cups organic cottage cheese
½ cup freshly grated organic parmesan, plus extra for serving
2 tbsp unsalted organic butter
1 tbsp extra-virgin olive oil
3 garlic cloves, minced
¾ cup milk or unsweetened oat milk
½ tsp freshly ground black pepper
½–1 tsp fine sea salt, to taste
Pinch ground nutmeg (optional)
1–2 tsp fresh lemon juice
2 tbsp chopped fresh parsley
½–1 cup reserved hot pasta cooking water
Instructions:
Cook pasta in well-salted boiling water until al dente; reserve 1 cup pasta water and drain.
Blend cottage cheese, parmesan, milk, pepper, salt, nutmeg, and lemon juice until very smooth.
Melt butter and olive oil in a large skillet; gently sauté garlic until fragrant.
Pour blended sauce into skillet and warm on low, stirring, adding a splash of pasta water if too thick.
Add drained pasta to the sauce and toss, adding more pasta water as needed until glossy and well coated.
Remove from heat, garnish with parsley and extra parmesan, then serve immediately.
