Pineapple Ham Fried Rice

Ingredients:
4 cups cooked jasmine rice, cooled
1½ cups diced cooked ham
1½ cups pineapple chunks, drained
2 tablespoons vegetable or canola oil
1 teaspoon sesame oil
2 large eggs
3 cloves garlic, minced
1 medium carrot, finely diced
½ cup frozen peas
½ cup diced bell pepper (optional)
4 green onions, sliced (whites and greens separated)
3 tablespoons soy sauce
1 tablespoon oyster sauce
1 teaspoon brown sugar or honey
Salt, to taste
¼ teaspoon black pepper
Red pepper flakes or hot sauce, to taste (optional)
Lime wedges, for serving (optional)
Instructions:
Fluff the cold rice and prepare all chopped ingredients, draining the pineapple well.
Scramble eggs in a little oil until just set, then remove from the pan.
Sauté green onion whites and garlic, then add ham, carrot, peas, and bell pepper; cook until softened and lightly browned.
Add rice, then pour in soy sauce, oyster sauce, sesame oil, and brown sugar; stir-fry until rice is evenly coated and hot.
Fold in pineapple and scrambled eggs; cook a few minutes more and season with pepper, extra soy, and optional chili.
Turn off heat, add green onion tops, toss, and serve hot with lime wedges.
