Ingredients:
4 large flour tortillas (any variety)
1 cup (240 g) cream cheese, softened
2 tablespoons mayonnaise or Greek yogurt
1 teaspoon lemon juice
½ teaspoon garlic powder (optional)
Salt and black pepper, to taste
1 cup shredded purple cabbage
1 cup grated carrot
1 small yellow bell pepper, finely diced
1 small red bell pepper, finely diced
½ medium cucumber, seeded and cut into thin sticks
1 cup baby spinach leaves
2 tablespoons chopped fresh herbs (optional)
Instructions:
Mix cream cheese, mayonnaise or yogurt, lemon juice, garlic powder, salt, and pepper until smooth.
Prepare all vegetables: shred, grate, dice, and slice, then pat dry if very wet.
Spread a tortilla with a thin, even layer of cream cheese mixture to the edges.
Arrange vegetables and spinach in colorful horizontal rows across the tortilla, then roll tightly.
Wrap each roll and chill in the fridge for at least 30 minutes or up to overnight.
Unwrap, trim ends, slice into pinwheels, and pack snugly into lunchboxes with your favorite sides.
