Ingredients:
4 large eggs
1/2 cup cottage cheese
1 tablespoon butter
2 tablespoons milk or cream (optional)
1/4 teaspoon fine salt
1/8 teaspoon black pepper
1 tablespoon chopped chives or green onions (optional)
Pinch garlic powder or onion powder (optional)
Instructions:
Whisk eggs with cottage cheese, milk (if using), salt, and pepper until mostly combined.
Melt butter in a nonstick skillet over low to medium-low heat.
Pour in egg mixture and let the edges just begin to set.
Gently push and fold eggs around the pan, cooking slowly until soft curds form.
Remove from heat while still slightly glossy; stir in chives and adjust seasoning.
Serve immediately on warm plates with your favorite breakfast sides.
