Snack Bento “Protein Box”

Ingredients:
4 large eggs
120 g sliced turkey breast
80 g cheddar or gouda cheese, cubed
½ cup Greek yogurt or hummus
½ cup mixed nuts
1 cup baby carrots
1 small cucumber, sliced into sticks
1 cup cherry tomatoes
8–10 wholegrain crackers or rice cakes
Pinch of sea salt
Pinch of black pepper
1–2 teaspoons lemon juice or olive oil (optional)
1 tablespoon chopped fresh herbs (optional)
Instructions:
Boil, cool, peel, and halve the eggs; season lightly.
Roll the turkey slices, cube the cheese, and divide between two boxes with the eggs.
Add mixed nuts and crackers into separate dry compartments.
Slice cucumber into sticks and add with baby carrots and cherry tomatoes to the boxes.
Spoon yogurt or hummus into small cups, garnish if desired, and place in the boxes.
Seal the boxes and refrigerate for up to 3–4 days, then grab and enjoy.
