A bright, bubbly citrus base you can dress up with fruit, herbs, tea, or ginger. Make the base ahead; add bubbles to serve for maximum fizz.

Fresh lemon juice: 120 ml (½ cup)
Fresh lime juice: 60 ml (¼ cup)
Cold water: 480 ml (2 cups)
Simple syrup or runny honey: 60–90 ml (¼–⅓ cup), to taste
Fine sea salt: ⅛ tsp (a small pinch)
Sparkling water/club soda: 720 ml (3 cups), chilled
Ice: as needed
Flavor add-ins (choose 1–2, optional)
Watermelon purée (strained): 240 ml (1 cup)
Cucumber (grated then squeezed): 150 g (1 cup lightly packed)
Fresh mint or basil: 6–8 leaves
Pineapple or mango purée: 200–240 ml (¾–1 cup)
Strong hibiscus tea (chilled): 240 ml (1 cup)
Fresh ginger, finely grated: 1–2 tsp or 30 ml (2 tbsp) ginger syrup
Instructions
(Optional) Make quick simple syrup (1:1) and cool.
In a large chilled pitcher, combine lemon juice, lime juice, cold water, salt, and 60 ml (¼ cup) syrup/honey.
Add chosen flavor add-ins; muddle herbs lightly or stir in purées/tea/ginger.
Fill glasses with ice.
Gently stir in sparkling water.
Taste and adjust with more syrup, citrus, or a tiny pinch of salt. Garnish and serve immediately.
