Sushi Bake Recipe

Ingredients:
For the rice layer:
3 cups cooked sushi rice
3 tablespoons rice vinegar
1½ tablespoons sugar
1 teaspoon salt
For the topping:
400 g imitation crab, shredded
200 g cooked salmon, flaked (optional)
½ cup Japanese mayonnaise
2 tablespoons cream cheese, softened
2 tablespoons sriracha
2 teaspoons soy sauce
1 teaspoon sesame oil
To finish:
3 tablespoons furikake
1 cup shredded mozzarella or mild cheese
2 green onions, sliced
½ avocado, diced
½ small cucumber, finely diced
Extra mayo and sriracha, for drizzling
Roasted nori sheets, for serving
Instructions:
Cook rice and season with rice vinegar, sugar, and salt. Press evenly into a greased 8x8 or 9x9 inch baking dish.
Mix shredded crab, flaked salmon, mayo, cream cheese, sriracha, soy sauce, and sesame oil until creamy and well combined.
Sprinkle some furikake over the rice, spread the creamy seafood mixture on top, and sprinkle with remaining furikake and shredded cheese.
Bake at 375°F (190°C) for 10–15 minutes, until hot and the cheese is melted and bubbling. Broil briefly for extra browning if desired.
Let rest for 5 minutes, then top with green onions, diced avocado and cucumber, and drizzle with extra mayo and sriracha.
Serve warm with roasted nori sheets, scooping portions of sushi bake onto the nori and eating like mini hand rolls.
