Sweet Focaccia (Dessert Focaccia)

Ingredients:
Warm water – 1 ¼ cups (300 ml)
Active dry yeast – 2 ¼ teaspoons (7 g)
Granulated sugar – 3 tablespoons (divided)
All-purpose flour – 3 ¼ cups (400 g)
Fine sea salt – 1 ¼ teaspoons
Extra-virgin olive oil – ¼ cup (60 ml), plus extra
Mixed fresh berries – 1 ½ cups
Thinly sliced apple or pear (optional) – ½ cup
Honey or maple syrup – 3 tablespoons
Coarse sugar – 2–3 tablespoons
Ground cinnamon (optional) – ½ teaspoon
Lemon zest – 1 teaspoon
Vanilla extract – 1 teaspoon
Instructions:
Stir warm water, yeast, and 1 tablespoon sugar; let sit until foamy.
Mix flour, remaining sugar, and salt; add yeast mixture, olive oil, lemon zest, and vanilla; knead until smooth.
Place in oiled bowl, cover, and let rise until doubled, 1–1 ½ hours.
Press dough into an oiled 9×13-inch pan, rest if needed; let rise again 30–40 minutes.
Dimple dough, top with berries and fruit, sprinkle sugars and cinnamon, drizzle honey.
Bake at 400°F (200°C) for 20–25 minutes until golden and bubbling; cool briefly, drizzle more honey if desired, then slice and serve.
