Watermelon–Mint–Lime Refresher

Ingredients:
Seedless watermelon, cubed – 6 cups (about 900 g)
Cold water or sparkling water – 2 cups (480 ml), divided
Freshly squeezed lime juice – ¼ cup (60 ml)
Fresh mint leaves – ¼ cup, loosely packed
Honey or simple syrup – 3–4 tablespoons, to taste
Fine sea salt – pinch (about 1/8 teaspoon)
Ice cubes – 3–4 cups, for serving
Extra lime slices – for garnish
Small watermelon wedges or cubes – for garnish (optional)
Instructions:
Prep watermelon by cubing it and prepare mint leaves by rinsing and stripping from stems.
Blend 3 cups watermelon with lime juice, mint, honey or syrup, salt, and 1 cup water until smooth.
Add remaining watermelon and blend again; taste and adjust sweetness and lime to your preference.
Strain through a fine-mesh sieve into a pitcher if you want a smoother drink.
Stir in remaining 1 cup water or sparkling water, then chill or add ice to cool.
Serve over fresh ice in glasses, garnished with lime slices, mint sprigs, and watermelon wedges.
