Ingredients:
2 cups (about 450 g) cottage cheese (2% or low-fat)
3–4 tablespoons honey or maple syrup
1 teaspoon vanilla extract
Pinch of fine salt
½ cup berries (optional)
2 tablespoons peanut butter or almond butter (optional)
2–3 tablespoons dark chocolate chips (optional)
Instructions:
Blend cottage cheese, honey or maple syrup, vanilla, and salt until very smooth and creamy.
Taste and adjust sweetness or vanilla, blending briefly again.
Transfer to a bowl and gently fold in any berries, nut butter, and chocolate chips.
Pour into a loaf pan or shallow container and smooth the top. Cover well.
Freeze for 2–3 hours until firm but scoopable, then let sit at room temperature 10–15 minutes.
Scoop into bowls or cones, add toppings if desired, and return leftovers to the freezer, covered.
