Ingredients:
2 cups short-grain rice, rinsed
2 ½ cups water
1 teaspoon salt
1 tablespoon toasted sesame oil
1 teaspoon toasted sesame seeds
4 roasted seaweed sheets
2 eggs + pinch of salt
2 teaspoons neutral oil (for cooking)
1 small carrot, matchsticked
1 small cucumber, matchsticked and patted dry
4 strips yellow pickled radish
4 imitation crab sticks
2 teaspoons soy sauce
1 teaspoon sugar
1 teaspoon toasted sesame oil (for vegetables)
Optional dipping sauce:
2 tablespoons soy sauce
1 teaspoon rice vinegar
½ teaspoon toasted sesame oil
½ teaspoon sugar
½ teaspoon sesame seeds
Pinch chili flakes
Instructions:
Cook rice with water, then season warm rice with salt, sesame oil, and sesame seeds.Make a thin omelet, slice into strips, and sauté carrot briefly with soy sauce and sugar.Prepare cucumber, pickled radish, and crab sticks; toss vegetables lightly with sesame oil.Lay seaweed on a mat, spread a thin layer of rice over two-thirds, and line up fillings.Roll tightly using the mat, seal the edge, then brush rolls lightly with sesame oil.Slice each roll into bite-sized pieces and serve with optional soy-sesame dipping sauce.
